Tip:

Never cook
large pieces of meat (beef brisket, pork
butts or tenderloins) over 225°. You
will boil the fat out of the inside of
the meat, which will dry it out.

The most
popular BBQ woods are hickory and oak.
If you use mesquite it will give a sweet
smoky taste.

Never use
cheap charcoal. Cheap charcoals are made
with sawdust and glues. Never adds
favor. Make sure charcoal is made from
hardwood.

Don't use
charcoal lighter fluid. Leaves an
unpleasant taste.

Don't use
charcoal briquettes that have added
starter fluid built in.
