Tip:

  • Never cook large pieces of meat (beef brisket, pork butts or tenderloins) over 225°. You will boil the fat out of the inside of the meat, which will dry it out.
     

  • The most popular BBQ woods are hickory and oak. If you use mesquite it will give a sweet smoky taste.
     

  • Never use cheap charcoal. Cheap charcoals are made with sawdust and glues. Never adds favor. Make sure charcoal is made from hardwood.
     

  • Don't use charcoal lighter fluid. Leaves an unpleasant taste.
     

  • Don't use charcoal briquettes that have added starter fluid built in.
